The parmesan espuma was brilliant - a warm light cheese froth with tiny crunchy potatoes and herbs at the bottom and mustard crumb on top. The strange combination of white fish, bread crumbs and squid ink actually worked really well together. And the squid ink came in the form of a sponge cake - something we certainly weren't expecting. This dish cemented the fact that as important as the taste and quality of the food on offer is the imagination behind it and how it is presented. We felt the wine to match was quite fruity which balanced well with the salty taste from the monkfish. Braised in red six by nico for twenty four hours, the beef shin was cooked to perfection and was complimented perfectly with seasonal veg and a red wine jus. As the heaviest red wine on the menu we thought this Pinot was a little overpowering. With just the right amount of beer batter and vegetables, the cod was incredibly fresh and the mussels were not over pickled.
