Rub the spice mixture all over the meat. Step 3: Roast Place the roast on a roasting rack in a roasting pan, and place in the lower 1/3 of the oven. Roast until the internal temperature reaches 125 degrees F (roast will raise 5 degrees in temperature once you remove it from the oven), about 1 ¼ hours. The roast will take about 18 minutes per pound but the most accurate way to test doneness is with a meat thermometer. Step 4: Rest Remove the roast from the oven and allow to rest for 5 to 10 minutes before slicing. Slice against the grain.
