Yes, tried that in the past, worked well.
If you go production, make sure you have a proper support with Proxmox, you don't want to be alone when that thing breaks.

My team setup a four node private cloud with Proxmox with the following specs on each node and we have been experiencing great results.
Dual Intel E5-2620 v2 - 64 GB RAM - Debian Proxmox - 500 GB SSD (CEPH Shared Volume)- 500 GB SATA (Operating System)
All nodes have 10 G NICs
Minimum 3 hosts required for redundancy.
