Ingredients:
• 2 cups butter or 1 cup butter and 1 cup shortening
• 4 to 5 cups brown sugar
• 1 cup maple syrup (corn syrup)
• 2 teaspoons salt
• 1 teaspoon baking soda
• 3 teaspoons Vanilla extract (or more)
• Popcorn (10 quarts popped) (It will cook down)
Instructions:
1. Preheat oven to 250*F
2. Air-pop popcorn (or use light corn oil and a dash of salt)…place in 2 large bowls.
3. In a large saucepan, melt butter (and shortening) on medium heat
4. Add brown sugar, syrup, and salt. Bring to a boil while stirring constantly
5. Let mixture boil untouched (and uncovered) for 4-5 minutes*
6. Remove mixture from heat and stir in baking soda and vanilla
7. Slowly pour mixture over popcorn in a thin stream, stir popcorn to evenly coat
8. Spread popcorn over shallow baking dishes or cookie trays and bake in the oven for 1 hour, stirring every 15 minutes
9. Wait 15 or more minutes for popcorn to cool before serving. Enjoy!
Notes:
• Half this recipe unless you want a LOT of caramel corn!
• Bake the corn for less time in the oven if you like it chewy
*The sugar and the butter will combine after it reaches a certain temperature...they may be separated until it boils untouched for 4-5 minutes.
