  8. • Popcorn (10 quarts popped) (It will cook down)
  9. Instructions:
  10. 1. Preheat oven to 250*F
  11. 2. Air-pop popcorn (or use light corn oil and a dash of salt)…place in 2 large bowls.
  12. 3. In a large saucepan, melt butter (and shortening) on medium heat

  14. 5. Let mixture boil untouched (and uncovered) for 4-5 minutes*
  15. 6. Remove mixture from heat and stir in baking soda and vanilla
  16. 7. Slowly pour mixture over popcorn in a thin stream, stir popcorn to evenly coat
  17. 8. Spread popcorn over shallow baking dishes or cookie trays and bake in the oven for 1 hour, stirring every 15 minutes
  18. 9. Wait 15 or more minutes for popcorn to cool before serving. Enjoy!
  19. Notes:
  20. • Half this recipe unless you want a LOT of caramel corn!
  21. • Bake the corn for less time in the oven if you like it chewy
  22. *The sugar and the butter will combine after it reaches a certain temperature...they may be separated until it boils untouched for 4-5 minutes.
