  2. When you need a great foolproof recipe to feed family and friends, roasts are the way to go. The active time is really minimal, they feed a crowd and they look oh-so impressive. A ribeye is a great go-to cut of meat. The beef is well marbled giving you a beautiful flavor while riding the line between tender and perfectly chewy. This simple preparation will always give you exceptional results, leaving you more time to chat with your company or slave over those side dishes.

  4. Prime, Choice, Select? What the heck?! Prime is the best, and also the most expensive. If you want to shell out the cash, this is a great option. Choice is still a great cut, one step down from Prime, and also less expensive. Select is the lowest grade and will give the least desirable results. You're better off paying the extra few bucks for Prime or Choice
  5. 1 (4 to 5 lbs) Ribeye roast
  6. 2 tablespoons kosher or sea salt
  7. 1 tablespoon fresh cracked black pepper
  8. 1 teaspoon finely minced fresh rosemary
  9. Step 1: Take the Chill Off
  10. Remove the roast from the refrigerator and allow to sit at room temperate for about an hour. This will help the beef cook more evenly. Preheat the oven to 350 degrees F.

  29. 1 (4 to 5 lbs) Ribeye roast

  36. Step 2: Season Liberally
  37. In a small bowl stir together the salt, pepper, and rosemary. Rub the spice mixture all over the meat.
  38. Step 3: Roast
  39. Place the roast on a roasting rack in a roasting pan, and place in the lower 1/3 of the oven. Roast until the internal temperature reaches 125 degrees F (roast will raise 5 degrees in temperature once you remove it from the oven), about 1 ¼ hours. The roast will take about 18 minutes per pound but the most accurate way to test doneness is with a meat thermometer.

  41. Remove the roast from the oven and allow to rest for 5 to 10 minutes before slicing. Slice against the grain.
