Chocolate cupcakes can be perfect things for parties, meeting with friends or even just a little snack for yourself, follow the instructions below carefully for delicious, fluffy cupcakes for your needs in delicious chocolate flavour!
Ingredients:
For the cupcakes
60g good quality (70%) cocoa powder
4 or 5 tablespoons boiling hot water
175g unsalted butter, softened
175g caster sugar
120g self-raising flour
1 level teaspoon baking powder
3 eggs
For the buttercream icing
100g dark chocolate, melted
60g butter, softened
250g icing sugar
Chocolate sprinkles, for decorating
Preheat the oven to 200 degrees C / Gas mark 6. Line 2 - 12 hole bun trays cupcake paper cases.
Place cocoa into a large bowl (advisable sift before put in bowl); add hot water (four tablespoons) and mix into chocolate syrup. Add the softened butter, eggs, baking powder, self-raising flour and sugar. Mix with electric beaters (not advisable but can of course stir by hand but may not get the same result as wanted) until well mixed and creamy/smooth.
Put mixture into the paper cases, filling them up evenly within all of the cases. (If necessary do not spread evenly, and have a less amount of cupcakes but bigger so they will cook better [each cupcake case should be filled to 3/4 full]. Bake for 10 minutes, or until risen and golden brown. Remove from the oven; cool on a wire rack.
Icing [chocolate]: Mix the butter [heated in microwave or in pan] and melted chocolate in a bowl; add in icing sugar [sifted into the bowl], mix with a spoon or an electric beater until smooth and runny. Spoon into a piping bag with a number 5 star nozzle. Place icing onto the cupcakes however you want, can place on with spoon or you could put into a piping bag and place the icing on that way, ice evenly onto the cupcakes. [optional] you can also put on other decorations e.g. sprinkles [chocolate or otherwise] onto the cupcakes however you wish.
