Any hosting provider that you choose should be able to handle any requests for wordpress but if that is something that you specifically need I suggest contacting them first and ask them what they do with sites that run wordpress on their servers.

Correct a GOOD Wordpress host will behave more like a SaaS rather than a shared hosting account. Given obviously the installation will be manned by the company rather than the client him/her self.
However if that all you need/wants then you can opt for that for convenience and ease of operation.
But as others mentioned a shared account that is quality (typically $5+/month) could possibly do the "heavy lifting" for you as long as your not expecting the provider to maintain extensive amount of plugins and/or etc.

It all boils down on how much support they are willing to include. A bargain provider? You can't expect much if any extra support included. As they will often charge even for basic tasks.
But if your at a more "fancy" provider they will at least include installations on the house as long as it not a "everyday affair".

Yes basic script installation which i used to offer, but if they then want you to install plugins etc. then these become chargeable as a configuration addon

I see what your saying but after considering...
Having to explain what's charge able and what's not
Having to explain "we take no liabilities blah blah blah"
Having to collect said payments
Having to BE there to do the actions
I would just find for myself it would be easier to just up mark the account pricing. Then re scale as needed (for example if they are demanding more support then they shouldn't mind a higher per month price to make up for that).
I find that not much different than steady increasing gaming membership pricing. As more features are added to a game the more they charge their newer subscriptions for.
