For years, Paris hotels came in roughly two categories: historic palaces and offbeat neighborhood charmers. Which was all fine and good until, suddenly, it wasn’t. In a matter of months, a slew of new properties launched, dramatically enhancing the Paris hotel scene. Just last year, the Shangri-La and Raffles’ Royal Monceau opened their doors, soon joined by the Mandarin Oriental and the Peninsula.
